Specs: The product is from a new series of shelf-stable Thai-noodle dishes from Trader Joe’s. The wheat noodles and red curry sauce are separately packaged and contained in a lidded cardboard bowl, which is used for microwaving and serving.
Preparation summary: Empty noodles and curry sauce into the cardboard bowl, replace the lid, and microwave on high for 1 ½ minutes. Stir and continue microwaving for 30 seconds. Let cool for 2 minutes.
High points: The sauce carries an impressive depth of flavor from red chilies, keffir lime leaves, fish sauce, coconut milk and shallots. It’s spicy enough to require keeping a beverage in close reach—and we like that.
Low points: The fun ends upon biting into the first gummy noodle. Even if you’re a fan of well-done pasta, these thick strands of mushy gluten might trick you into thinking you’re eating pregnant worms.
