After seeing every outrageous burger known to Burgerville, USA, along comes one that shatters the showy quintuplet of patties layered with countless garnishments and scads of cheese. Those have become boring even to Guinness World Records.
Instead, this radical darling caught our eye—not because of its size but rather for its hardcore beefiness that goes much deeper than just the flesh.
The “bone marrow burger” is available sporadically for $10 at The Friendly Tavern in San Diego. It’s adorned with a center-cut beef bone harboring a well of flavorful, nutrient-rich marrow that you spoon out as a luxurious come-on to the burger itself.
Owner Brandon Zanavich introduced the creation in September for the tavern’s one-year anniversary. It appears as a special about once a month. When it does, he sells nearly 100 a day.
“We had done burgers topped with truffles, foie gras, and crab and thought this was a natural ‘next special,’” he told The Hash Star.
What you get between the bun are two “smashed” beef patties, two slices of white American cheese, butter-braised onions, garlic aioli, and the bone marrow.
The burger, adds Zanavich, is a play off his original “dirty flat top burger” available at his original eatery (The Friendly) located several blocks away. It’s a top seller featuring the same specs as above, sans the bone marrow.

Food texture is very important to me. Therefore, I can say in all honesty that I would eat dirt off a floor before I would spoon marrow out of a bone and eat it. Health benefits be damned.
