The Hash Star

The Cauliflower Craze Isn’t Fading

Product: Mashed Cauliflower

Specs: Frozen, mashed cauliflower contained in a 12-ounce tray. The mash contains heavy cream, milk and sea salt.

Preparation summary: Place tray in microwave and cook on high for 4 minutes. Peel film back, stir, and continue cooking for 3 to 4 minutes. If cooking in a conventional oven, place tray on a baking sheet and cook at 350 degrees for 45 to 50 minutes.

High points: The pure flavor of cauliflower is augmented with a tinge of creaminess and a moderate measure of salt. For those obsessed with their carb intakes, the package carries only one-fifth of the pesky compound compared to an equal amount of mashed potatoes, which these are supposed to resemble.

Low points: Sure, they look like mashed potatoes, but hardly taste like them. Once cooked, the cauliflower starts out with a thin, watery texture that brings baby food to mind. If you let the product stand for about five minutes before serving, they firm up to a palatable consistency. Also, unless you buy the product on sale, it’s overpriced.

Average retail price: $4.69
